AI are bots that can be played against in SuperTuxKart.
Offline AI
In Singleplayer and Splitscreen Multiplayer, games can be set up with AI. They can be used in any gamemode except Egg Hunt and any difficulty. For most players, they are quite challenging and even some top players have problems beating them.
Online AI
For online gameplay, servers with AI can be set up. Existing examples are Frankfurt One and HK STK #3. However, online bots are way worse than offline AI. Even new players can beat them easily.
